    Ingredients

    • 1 cup cooked quinoa, warmed
    • 1/2 cup shredded mozzarella or cheddar
    • 2 egg whites
    • 1 clove garlic, minced
    • 1 teaspoon salt
    • 1/3 cup chopped fresh spinach leaves

    Directions

    1. 1Preheat oven to 350 degrees and spray a mini muffin tin with cooking spray.
    2. 2In a medium bowl, mix the warm quinoa with the cheese to melt the cheese. Add the egg whites, garlic, salt, and spinach leaves. Stir to combine.
    3. 3Spoon mixture into mini muffin tins, filling to the top. Bake at 350 degrees for 20 minutes. Remove from oven and let cool for 10 minutes. Run a small knife around the edges to loosen and pop out of the muffin tin.

    My picky fourteen-year-old daughter absolutely loves these. I am so thrilled because they are so healthy and I know she is getting a good nutritious breakfast. We make them at least four days a week. We use egg beaters instead of whole eggs and often add bacon bits (turkey bacon bits when we can find them). Great recipe!!!

    This turned out amazing! You may also add a few chopped asparagus or broccoli or zucchini. I used larger muffin tin must cook 5-10 minutes more. I grated the garlic clove what a wonderful undertone of garlic flavor.

    I just made these and used leftover brown rice (because I didn't have already cooked quinoa), raw-milk cheese, and broccoli, onion, and chard finely chopped in a food chopper. Turned out great! Also, I don't have a small muffin tin, so I used a regular muffin tin and filled the cups half way--had to bake about 5 minutes more.

    Made these this morning and it was very good. GREAT source of protein to start the day. Next time I may try to add a little sausage for a little more flavor. But it was great the way it is.
