As prepared by Girl Who Ate Everything,

Give every day a better beginning -- that’s the simple idea behind Start Happy. Join our movement to take back breakfast and say hello to a happier you!

Bust out your cape because these little Quinoa Omelette Bites are a super breakfast packed with super foods.

That's right, these Quinoa Omelette Bites are protein-filled goodness to start your morning. And trust me, I need all the help I can get.

To me quinoa is the most underrated super food. It's a grain high in protein, fiber, and packed with vitamins. Oh and gluten free -- major bonus.

If you start your day with a carb-loaded breakfast, it may last you for a while, but in an hour or two you'll be scrounging for a snack. The key is a high protein breakfast to sustain you longer.

You wouldn't guess that these little bites are packed, and I mean packed, with protein and vitamins. They are made with cooked quinoa, spinach (another super food), cheese, and garlic.

Here's how quickly they come together:

Cook the quinoa.

First, cook your quinoa. Easy as cooking rice!

Mix cheese into the warm quinoa.

Add a sprinkle of cheese to the warm quinoa and mix it together.

Add spinach and egg whites.

Next, add some egg whites, spinach (talk about good for you!), and garlic.

Use a cookie scoop to make them uniform in size.

Scoop into a mini muffin tin all the way to the top. I like to use a cookie scoop for easy scooping.

Scoop the quinoa mixture into muffin cups.

Using a cookie scoop also makes them all uniform in size.

Bake until edges of the quinoa bites are golden.

Bake for 20 minutes. Mmm. They look so good!

Quinoa Omelette Bites ready to eat!

I love how the edges of the quinoa bites start to get all crispy. Try these Quinoa Omelette Bites for a super breakfast to get your day started right.
