As colorfulicious as a snack can be -- Rainbow Chex Mix!
Looking for a fun little treat for kids and adults alike? I love to make a custom dessert-y Chex Mix, using melted chocolate or colorful candy melts in holiday or team colors.
The mix also looks fab in little bags or muffin cups on a celebratory buffet table. So naturally I was very excited when Tablespoon asked for a Rainbow Chex Mix
! (You know how we are about rainbows!)
It’s so easy with the Chocolate Chex Mixes …. they’re not too sweet and, most importantly, have a little salt, which tastes amazing with the melted chocolate. My favorite combo is the Chocolate Peanut Butter Chex Mix AND (and this is an important “and’) Chex Mix Muddy Buddies. Add the Muddy Buddies at the end, as the chocolate or melts won’t stick to their luscious powdery coating.
To make your own rainbow mix, start with candy melts in rainbow colors. You'll need 1/2 cup of each color (pink, orange, yellow, green, blue and purple) to generously coat the Chex Mix.
Spread the Chex Mix on a cookie sheet.
Then, it’s time for rainbow fun. I melt the candy, one color at a time, in the microwave. Just put the melts in plastic storage bags, one for each color, twisting the top, carrot style. Then, microwave on 50% power, checking every 30 seconds or so.
(The 50% power is an important step – I had so much trouble with candy melts, and didn’t get what the big deal was about them. They would turn brittle in the microwave, and had an unpleasant chalky, chunky texture. One day, I read the directions on the package … and at 50% power, its smooth melting all the way.)
Once the candy is pliable, snip off the very corner of the bag and drizzle away. Repeat with remaining colors. I added tiny rainbow sprinkles after each color.
Once the candy melts have set, gently break up the Chex mix into bite sized chunks.
Add the Muddy Buddies.
If you’re a lily gilder, like me, this is an opportune time to add even more sprinkles – like the giant polka dots that top my mix.
