These fun sandwiches make a fab appetizer -- for kids and adults.

Ingredients

  • A rainbow selection of jams/jellies/preserves such as strawberry, marmalade, lemon curd, mint, etc)
  • Whipped cream cheese
  • 12 slices white sandwich bread

Steps

  • 1
    Lay out six slices of white sandwich bread. Spread whipped cream cheese on each of the slices from edge to edge.
  • 2
    Lay out the remaining six slices of bread and spread each one with a different jam/jelly/preserves.

    Top each cream cheese-spread slice with a jelly-spread slice.
  • 4
    Cut off the edges. Then, slice the sandwiches into four squares each.

    Serve laid out in rainbow or half-rainbow order.

    Choosing Your Rainbow

    You’ll need six different colors of jams, jellies and preserves. Which ones? Here are a few ideas:

    Red:  Strawberry, red raspberry, cherry, currant
    Orange:  Apricot, marmalade, mango, guava
    Yellow:  Lemon curd, apple, pineapple
    Green:  Mint jelly
    Blue:  Blueberry
    Purple:  Mixed berry, blueberry, blackberry, boysenberry

    Cutting the Sandwiches

    While the recipe suggests cutting the sandwiches into squares, you can also use tiny cookie cutters to cut the sandwiches into single bite sandwiches. If you take this route, be sure to be more sparing with your cream cheese and jelly/jam/preserves.

    Serving

    Arrange the sandwiches in rainbow order (or half-rainbows) in stacks on a serving plate. If you do tiny bites of sandwiches cut with cookie cutters, spread them out on a big platter and offer toothpicks for picking them up.
