Lemony Fiber One™ bars are crumbled into a deliciously sweet streusel, then layered with rainbow yogurt whip for a sweet treat that’s quick, simple… and so colorful!

Ingredients

(6-count) boxes Fiber One™ 90 Calorie Lemon Bar

container Yoplait® Fat Free red raspberry yogurt
1
container Yoplait® Light orange crème yogurt
1
container Yoplait® Light Fat Free lemon cream pie yogurt
1
container Yoplait® Light Fat Free Key lime pie yogurt
1
container Yoplait® Original 99% Fat Free Piña Colada Yogurt
1
container Yoplait® Light Fat Free blueberry patch yogurt

cups whipped topping, divided
Betty Crocker™ gel food colors: neon pink, neon orange, yellow, neon green, blue, and neon purple
Bubble gum balls (red, orange, yellow, green, blue, purple—optional)

Directions

  • 1 Open each lemon bar and crumble into a large bowl. Set aside.
  • 2 In a small bowl, whisk together the container of raspberry yogurt with 3/4 cup whipped topping until fluffy. Tint red. Repeat until each container of yogurt has been whisked together with whipped topping and gel food color: orange creme with orange, lemon with yellow, lime with green, pina colada with blue, and blueberry with purple. Spoon each colored yogurt whip into separate pastry bags.
  • 3 Place 1 tablespoon of lemon-bar crumble into the bottom of six martini glasses. Snip a 3/4-inch opening in the tip of each pastry bag. Pipe a layer of colored yogurt whip on top (one color for each glass), add another 3 tablespoons of lemon-bar crumble, and finish with a swirl of yogurt whip on top. Garnish with color-coordinating bubble gum balls. Refrigerate until ready to serve. Enjoy!

Tips  

To get the double-swirled look on the top of your parfait, simply fill a pastry bag with whipping cream. Snip a 3/4-inch piece from the tip of the bag, then place this bag with a colored bag of yogurt whip inside a large pastry bag. Cut the top from this larger bag, and pipe in a swirl. Voila!
