Rainbow Fruit Pizza

A fresh, simple, summery dessert made with crescent dough, a yogurt-cream cheese base, and colorful rainbow fruit. Perfect for a party, and worth the pot of gold at the end of the rainbow!

Ingredients

can (8 oz) Pillsbury™ refrigerated crescent dough sheet
1
container (5.3 oz) Yoplait® Greek 100 protein vanilla yogurt
2
oz cream cheese, softened

large strawberries, sliced
1
container (4 oz) mandarin orange segments, drained and patted dry (from 6-count package)
1
kiwifruit, peeled and cut in half lengthwise, then into 1/4-inch half-moons

cup fresh blueberries
1/2
cup fresh blackberries

Directions

  • 1 Heat oven to 375°F. Line large baking sheet with cooking parchment paper.
  • 2 Unroll crescent dough onto center of parchment paper; press to make 12x8-inch rectangle, lightly pressing dough to shape as needed. Using pizza cutter or sharp knife, trim away outer top corners and bottom inside middle of dough to form a rainbow shape. Carefully press down bottom corners of crescent dough to ensure they remain flat during baking.
  • 3 Bake 8 to 11 minutes or until light golden brown. Remove from pan to cooling rack. Cool completely, about 15 minutes.
  • 4 In small bowl, mix yogurt and cream cheese. Spread mixture on top of cooled crust, leaving 1/2-inch border around all sides.
  • 5 Arrange strawberries along outermost edge to form the first rainbow fruit stripe. Follow with oranges, kiwifruit, blueberries, and finishing with blackberries. Serve immediately, or cover and refrigerate up to a few hours. Cut and serve.

There's no pot of gold, but there is plenty of fresh fruit! This colorful Rainbow Fruit Pizza is perfect for a summertime party.

Rainbow Fruit Pizza reminds me of the times I spent as a little girl begging my dad to chase the rainbows we spotted through the car window. I was convinced we’d find a leprechaun at the end of one, catch him, then earn our three wishes for his release.

Don’t ask me how we were going to catch this leprechaun — trap him under the spare tire? Lure him in with sweet country music played over the radio? Logistics were unimportant to my seven-year-old self. All I knew was that if we could snag him, all my wildest dreams would come true. Every stuffed animal I ever hoped for would materialize in my bedroom, and I would be allowed as much ice cream as I wanted, whenever I wanted, forever and ever amen. No wishing for more wishes though. Only fools don’t realize this tactic never ends well.

I can’t remember my dad’s exact explanation for why my country music strategy wouldn’t work out, but we’d head home and he would make us a round of vanilla milkshakes to ease the disappointment. At least one of my wishes had partially come true.

It’s a silly memory, but it makes me smile to remember a time when life was both more black and white and more colorful. Rainbow Fruit Pizza is in honor of the inner kid in all of us who’s ready to chase leprechauns for the sake of a lifetime supply of stuffed animals.

We start by unrolling a single sheet of seamless Pillsbury Crescent Roll Dough. Ta-dah! Crust.

Next, we channel our inner seven-year-olds and doodle a rainbow by cutting away the corners and an arch at the center. We pop our artwork into the oven and bake until it becomes a flakey, golden background for the Rainbow Fruit Pizza to be.

While the crescent roll crust bakes, let’s prep the fruit of many colors. For my rainbow, I chose strawberries, mandarin oranges, kiwi, blueberries, and blackberries, but feel free to swap whatever rainbow-colored fruits you like. Mother nature is creative, and we have many options!

Once the crust is cool, it’s time to spread our “sauce” of Yoplait Vanilla Greek 100 Yogurt and cream cheese. It’s a thick, creamy, tasty vanilla cloud that’s perfect with our rainbow of fruit.

Now let’s color! Arrange the fruit in rainbow order, beginning with the red at the outside, and then working inward towards the center. It’s kind of like art class, except way more fun because we're going to eat it in the end.
