Ingredients

  • 4 Vanilla MoonPies™
  • 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • Red, orange, yellow, green and blue food coloring

Steps

    Cut approximately 1/3 of each MoonPie™ off.
  • 2
    Divide the frosting into 5 separate small bowls. Mix in food coloring and place each color into separate small disposable icing or zip-top sandwich bags. Use a small piping tip or simply cut off a small corner of the bag.

    Pipe each color onto the top of the Moon Pie to look like a rainbow.
  • 4
    Push a popsicle stick in the bottom to make Rainbow MoonPie™ Pops if desired.

  • These rainbow MoonPies™ are an easy to make and fun to eat treat. 

    This gal loves her MoonPies™ and that’s no lie. Here up in the Northwest, it’s not always easy to find a MoonPie™ – I usually happen upon them at a convenience store or gas station.

    So when I told my hubby I needed some gas in my car and was heading out the door, he said, “Bring me back a MoonPie™ too.” My cover was blown.

    Vanilla MoonPies™ are the perfect canvas for my rainbow treats and are super easy to make. Just what I needed for a cute and easy St. Patrick’s Day snack without the fuss of baking. Decorating is the best part anyway, and store-bought frosting makes this treat even easier!

    You can use any flavor MoonPie™ you like. Banana is my favorite (you’d think it would be chocolate – shocker!) but I think the vanilla looks the prettiest for this treat. Just two more ingredients – Betty Crocker™ Vanilla Frosting and gel food coloring. That’s it! I know, right?

    Cut off about 1/3 of the MoonPie™.

    Divide your frosting into 5 small dishes and mix in the food coloring gel. I use the gel for really bright rainbow colors, but you can use the liquid gel if you want pastel rainbows. Place the frosting in a piping bag or zipper bag and either cut off a small corner of the bag for piping or use an icing tip (I used Wilton #12).

    Now the fun part! Pipe your frosting on the top of the MoonPie™.

    To take this treat to the next level of adorableness, push a popsicle stick in the bottom for Rainbow MoonPie™ Pops.
