Rainbow Popcorn Balls

Every color of the rainbow (and lots of fun and feisty colors!) come together in this delicious recipe for Rainbow Popcorn Balls.

Ingredients

1
bottle (16 ounce) light corn syrup
1 1/2
cups sugar
20
cups popcorn, popped

packets unsweetened, powdered drink mix (like Kool-Aid)

Directions

  • 1 In a large pot, melt butter, corn syrup, and sugar together over medium heat until boiling. Allow to boil for 2 minutes (or until the mixture reaches a soft ball stage), then remove pan from heat.
  • 2 Separate popcorn evenly into six bowls or large paper bags. (Note: A fast way to pop the popcorn is to place 1/2 cup of uncooked seeds into a large, brown grocery bag. Roll the top of the bag down several times, then microwave it for 3-4 minutes. 3-4 batches should be enough to yield the 20 cups needed for this recipe. Be sure all unpopped popcorn seeds have been removed by lifting the popped popcorn out of the bag, and into a large bowl with your hands. Don't just dump the bag into a bowl!)
  • 3 Working quickly, whisk 1/2-1 teaspoon of drink powder into 1/3 cup of the corn syrup mixture. Drizzle over each bowl of popcorn and toss until coated in color. Don't worry if the popcorn is completely coated with this sugary sauce. You're going to pour a final coat over everything before forming them into ball!
  • 4 Once all bowls of popcorn have been tinted with the colored drink and sugar mixtures, pour all the colored popcorn back into the pot, and toss with the remaining corn syrup mixture.
  • 5 The popcorn should now be very well coated with the sugar mixture.
  • 6 Wet your hands slightly with cold water. Working quickly, gather together a cup of popcorn and press it gently together to form a ball. Place balls on a parchment-lined baking sheet and allow to cool. Cover each ball with plastic wrap to store, or eat immediatey and enjoy!

Which is why, we thought it an irresistible task to come up with a recipe for Rainbow Popcorn Balls, where every color of the wind is patted together into a perfect sphere. Kinda like the world as we see it. Only edible.

Rainbow Popcorn Balls Ingredients

Here's what you need to get started. We're going to make a basic white-sugar caramel, then whisk a bit of unsweetened drink mix powders (like Kool-Aid) into six separate bowls of caramel.

See that? Six separate bowls, six separate batches of popcorn get a kiss of color and flavor from six different colors of drink mix.

Once you've got your colored popcorn, you're gonna toss it all together (I just kerplopped everything into the giant pot I used to heat together the caramel), then you're going to drizzle the extra white caramel on top of the popcorn. This will give you enough "stick" to "stick" the popcorn balls together.

There's just enough syrup now coating the popcorn balls to make it easy to press them all together into gorgeous spheres. The ones in the photo are the size of a grapefruit, but you can make kid-friendly, two or three-bite balls, if you want!
