Perfect vanilla cupcakes are frosted with homemade buttercream, airbrushed with vibrant rainbow colors, and served with colorful test tube shot glasses filled with cake vodka. A great way to get any party started!

Ingredients

Cupcakes

box Betty Crocker SuperMoist™ white cake mix
1
cup cake-flavored vodka
1/3
cup vegetable oil

eggs

Frosting

(2-pound) bags powdered sugar

sticks butter (softened)
1/4
to 1/2 cup milk, divided
1
tablespoon vanilla

cans edible airbrush frosting color: red, orange, yellow, green, blue

Directions

  • 1 Preheat oven to 375ºF.
  • 2 In a stand mixer, beat together Betty Crocker™ cake mix, vodka, vegetable oil and eggs until smooth. Spoon into muffin tins lined with cupcake wrappers. Bake for 14-19 minutes, or until toothpick comes out clean. Remove and cool completely.
  • 3 In a stand mixer or large bowl, prepare the frosting by beating together powdered sugar, butter, half the milk, and vanilla until smooth. Add just enough milk to make the frosting light and fluffy, not runny. Spoon frosting into a large pastry bag fitted with a large star tip. Pipe frosting onto cooled cupcakes.
  • 4 Spray the frosting on each cupcake with a rainbow of airbrushed frosting colors. Hold the airbrush cans about an inch away from the cupcake and spray a small amount of the frosting onto the cupcake. Start with red on the bottom of the cupcake and work up to purple at the tip.
  • 5 Fill test-tube shot glasses with cake vodka and press gently into the center of each cupcake. Serve immediately.
Tips  

This recipe requires 24 colorful test-tube shot glasses, found online or in specialty stores.

Press the test-tube shot glasses into soft frosting as soon as you pipe the frosting on the cupcakes. If you refrigerate the frosting or let it harden, the shot glasses will mess up your beautiful frosting creation!
