Tips & Techniques

  • High Altitude (3500-6500 ft):

    No change.

  • Use 1/2 teaspoon almond extract in place of the amaretto. Other fresh berries can be used to top these tarts. Blackberries, blueberries or even a mixture of seasonal berries are a delicious alternative to the raspberries.

  • Sprinkle the bottom of the tarts with finely chopped toasted almonds before filling. Use a fine-mesh sieve to dust the tops of the tarts with powdered sugar.

Ingredients

  • 1  container (8 oz) whipped cream cheese spread
  • 1/4  cup powdered sugar
  • 1  to 2 tablespoons amaretto
  • 6  single-serve baked sweet tart shells (from 8.5-oz package) or graham cracker crusts (from 4-oz package)
  • 36  fresh raspberries (about 3/4 cup)

Directions

  1. 1In medium bowl, beat cream cheese spread, powdered sugar and amaretto until smooth.
  2. 2Divide cream cheese mixture evenly into tart shells. Top each with 6 raspberries.
