Chicken breasts cooked with raspberry and orange juice - an easy stovetop recipe that’s ready in just 20 minutes!

Ingredients

teaspoons vegetable oil

boneless skinless chicken breasts
1/4
cup seedless raspberry jam

tablespoons orange juice

Directions

  • 1 In 10-inch nonstick skillet, heat oil over medium heat until hot. If desired, season chicken with salt and pepper; add to skillet. Cook 10 to 12 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F).
  • 2 Add raspberry jam and orange juice; stir until melted. Heat to boiling. Boil 1 to 2 minutes or until slightly thickened. Serve sauce over chicken.
Tips  

If chicken breasts are large, place them between sheets of waxed paper and gently flatten them with a meat mallet. This will help them cook faster and more evenly.

For an impressive presentation, garnish each chicken breast with 1/3 cup of fresh raspberries and a sprig of fresh mint.
