An elegant dish that takes minutes to make. Your blender does most of the work!

Ingredients

Refrigerated ravioli
Jarred roasted red bell peppers, drained
Chopped onion
Whipping (heavy) cream
Chopped fresh or dried basil leaves
Freshly ground pepper
Shredded Parmesan cheese

Directions

  • 1 Prepare ravioli as directed on package; drain. Meanwhile, heat peppers and onion to boiling in saucepan; reduce heat to low. Simmer uncovered until mixture is soft. Carefully pour into blender. Cover and blend until smooth.
  • 2 Pour back into saucepan; stir in whipping cream (about 1 cup per 1/2 cup vegetable mixture), some chopped basil and pepper. Heat over low heat, stirring occasionally, until hot. Serve over ravioli; sprinkle with cheese.
