Red Beans and Rice

This Southern classic in the crock pot tastes just like you have been slaving away over a bubbling cauldron all day! Made with smoked turkey sausage for a lighter version. 8 bowls

Ingredients

pound dry kidney beans, rinsed and sorted

cups water
5
regular bouillon cubes
1/2
pound smoked Turkey sausage
1
medium onion, diced
5
cloves garlic, minced
2
teaspoons Tony Chachere’s Creole seasoning
3/4
teaspoon cumin
3/4
teaspoon corriander
1/2
teaspoon oregano
1/2
teaspoon smoked paprika
4
cups cooked rice

Directions

  • 1 Combine all ingredients in the crock pot.
  • 2 Cook on HIGH for 6 hours.
  • 3 Once beans are tender, mash about half in the crock pot. This helps give the beans that starchy sauce!
  • 4 Serve over rice. Enjoy!
