Tips & Techniques

  • High Altitude (3500-6500 ft):

    Make cake following High Altitude Directions on box.

  • To show off the red, white and blue of this cake, cut into serving size pieces and arrange on a platter. Top each piece of cake with a tiny American flag available at craft stores. Garnish the platter with whole strawberries and blueberries.

Ingredients

  • 1  box (18.25 oz) white cake mix with pudding
  • Water, oil and egg whites called for on cake mix box
  • 1  box (4-serving size) strawberry-flavored gelatin
  • 1  cup boiling water
  • 1/2  cup cold water
  • 1  box (4-serving size) white chocolate instant pudding and pie filling mix
  • 1/3  cup milk
  • 1  container (8 oz) frozen whipped topping, thawed
  • 1  cup sliced fresh strawberries
  • 1/2  cup fresh blueberries

Directions

  1. 1Heat oven to 350°F. Make cake mix as directed on box for 13x9-inch pan, using water, oil and egg whites. Cool completely in pan on cooling rack 1 hour.
  2. 2Pierce cooled cake with fork at 1/2-inch intervals. In medium bowl, stir gelatin and boiling water until dissolved. Stir in cold water. Carefully pour mixture over entire surface of cake. Refrigerate at least 3 hours until serving time.
  3. 3In large bowl, mix pudding mix and milk until well blended. Gently stir in whipped topping. Spread over cake. Arrange strawberries and blueberries on top of cake to look like flag. Store in refrigerator.

I made this I loved the way it tastes, however I did run into some problems. First and foremost finding the white chocolate pudding didn't happen, we ended up using french vanilla. The pudding once mixed needs to be mixed immediately into the whipped cream so that should be ready in a separate bowl, adding it to the pudding did not work. Also be careful of over mixing the pudding, another issue we had, it became very stiff. We ended up with clumps of pudding so we used our hand mixer which worked out great. The jello had other ideas however, it all pooled around the edges, I was hoping for it to have absorbed more into the cake. But overall even with the problems I would make this again, it tastes amazing, though I would love to try it with the white chocolate pudding.

Poke Cakes for all Seasons: This is a lovely idea for Honoring a National 'Flag Day'. For other Holidays all year - use Yellow Cake Mix with Pudding in mix (or add your own favorite pudding); your favorite flavor, color, & taste Jello; frost with pudding and Cool Whip; choice of fruit available or skip using fruit all together. All Summer, you have to offer a variety of flavors. What a great trade-off, for a Light, Friendly, Tasty Celebration!
