Ingredients

cups (7 medium) thinly sliced unpeeled cucumbers

tablespoon pickling salt
2
medium onions, thinly sliced (2 cups)
1
cup chopped green bell pepper
2
cups sugar
3
teaspoons celery seed
3
teaspoons mustard seed
1
cup white vinegar

Directions

  • 1 In large bowl, combine cucumbers and salt; mix well. Let stand 30 minutes. Drain well. Stir in onions and bell pepper.
  • 2 In small bowl, combine remaining ingredients. Pour mixture over vegetables; mix well. Store in clean, covered container or pack in quart jars; refrigerate several hours to blend flavors. Store in refrigerator for up to 3 months.
