Ingredients

  • 2 tablespoons butter or margarine
  • 1 medium stalk celery, chopped (1/2 cup)
  • 1 small onion, chopped (1/4 cup)
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups cooked rice
  • 1/2 cup chopped walnuts
  • 1/3 cup raisins
  • 1/4 teaspoon paprika
  • 4 slices bacon, crisply cooked and crumbled

    Melt butter in 10-inch skillet over medium-high heat. Cook celery, onion, salt and pepper in butter, stirring occasionally, until vegetables are tender; remove from heat.

    Toss celery mixture and remaining ingredients. Use to stuff one 8- to 10-pound turkey.

    Substitute 1 cup cooked wild rice for 1 cup of the cooked rice and substitute pecans for the walnuts. Omit raisins and paprika. To cook wild rice, heat 1/3 cup uncooked wild rice and 1 cup water to boiling, reduce heat to low and simmer about 40 minutes or until water is absorbed.
