Hearty dinner for four! Serve your family this margarine and white wine Worcestershire sauce brushed roast chicken for a delicious meal!

Ingredients

(3- to 3 1/2-lb.) whole frying chicken
2
tablespoons margarine or butter, melted
2
tablespoons white wine Worcestershire sauce

Directions

  • 1 Heat oven to 375°F. Remove giblets from body cavity. Rinse chicken inside and out with cold water; drain. Pat dry with paper towels. Using string, tie legs and tail together. Close neck cavity by bringing loose skin over opening and holding in place with metal skewer. Twist wing tips under back.
  • 2 Place chicken, breast side up, on rack in shallow roasting pan. In small bowl, combine margarine and Worcestershire sauce; brush chicken with half of mixture. Do not cover or add water.
  • 3 Bake at 375°F. for 55 to 65 minutes, brushing with remaining margarine mixture halfway through baking. Untie chicken legs about 10 minutes before end of baking time. Chicken is done when fork-tender, juices run clear and drumstick moves easily up and down and twists in socket. Let stand 5 to 10 minutes before carving.
Tips  

Unwaxed dental floss makes a convenient string for trussing the bird.

To test for doneness, pierce the skin between the thigh and the body. Clear juices indicate doneness; if the juice still runs pink, roast the bird a little longer.

Roast chicken is a traditional centerpiece for a family dinner. Accompany it with fresh cranberry relish, buttered Brussels sprouts, mashed potatoes and tender green peas. Finish the meal with an old-fashioned homemade dessert, such as apple crisp, pumpkin pie of bread pudding.
