Potatoes and green onions mingle with fragrant rosemary and basil in this perfect sidekick for chicken, pork chops, steak or fish.

Ingredients

4
extra large red potatoes (or 8 small to medium size)
2
extra large green onion stalks (or 4 regular sized)
4
large leaves fresh basil
2
long sprigs fresh rosemary
seasoned salt, grilling seasoning or other favorite blend
olive oil

Directions

  • 1 Preheat oven to 350° F. Drizzle olive oil over bottom of 9x13 glass baking dish.
  • 2 Wash potatoes. Cut into large cubes and place in bottom of prepared pan.
  • 3 Slice onions in 1/8 inch thick circles. Sprinkle over potatoes in pan.
  • 4 Chop basil leaves. Sprinkle over potatoes and onions.
  • 5 Strip rosemary leaves from the woody stems. Sprinkle over all. Discard stems.
  • 6 Drizzle olive oil over all. Sprinkle liberally with your favorite prepared seasoning blend (or freshly ground salt and pepper).
  • 7 Bake at 350° F for 1 hour. Using a stiff spatula, turn mixture several times during baking to avoid burning.
  • 8 Check doneness with fork. Serve immediately.
