Rocky Road Brownie Waffles

Ingredients

  • 1 box Betty Crocker™ Fudge Brownie Mix
  • 3 whole eggs (called for on the box for cake-like brownies)
  • 1/4 cup water (called for on the box)
  • 2/3 cup vegetable oil (called for on the box)
  • 1/3 cup chopped nuts (walnuts, almonds or pecans)
  • 1/3 cup mini marshmallows
  • 8 teaspoons chocolate ice cream syrup (for garnish)
  • 1 cup marshmallow creme (for garnish)
  • 1 cup extra nuts and mini marshmallows (for garnish)

Steps

    In a large bowl, stir brownie mix, 3 eggs, water and vegetable oil until smooth. Add 1/3 cup of nuts and 1/3 cup of mini marshmallows to batter and stir until evenly distributed.

    Spray top and bottom plates of a waffle maker with non-stick baking spray. Heat to waffle setting.

    Pour batter onto waffle maker and lower the lid. Cook until baked throughout. Carefully remove to cooling wrack and cook remaining waffles.

    To serve, stack 2 or 3 waffles, spreading marshmallow creme between layers. Garnish top with chocolate sauce, nuts and mini marshmallows. Serve with ice cream, if desired. (Note: Can also be served one waffle at a time instead of stacking.)

  • One of my favorite flavors of ice cream is Rocky Road.

    I mean, chocolate ice cream with the bonus of nuts and marshmallows...? Sign me up! Since I love to make dessert into breakfast foods, I asked: Why not Rocky Road Brownie Waffles?

    I have seen several people make waffles using brownie mix and thought, “How genius…brownies in minutes – and better yet, you get to start your day off with dessert!”

    The brownie is soft when it’s finished cooking, and I find that lifting with a fork and then putting a wide spatula underneath really helps get them loose. Then, just slide them onto a plate. Doll up with whipped cream, chocolate sauce, extra nuts and extra marshmallows and you have yourself a delicious breakfast.

    To make the waffles, first gather your ingredients. Then, in a large bowl stir the brownie mix, eggs, and oil with whisk just until smooth.

    Fold in marshmallows and nuts.

    Heat waffle iron up. Spray baking spray to coat the waffle plates.

    Pour batter into waffle maker and close the lid.

    Bake until cooked, usually when the steam stops. Carefully remove waffle. They tend to be soft. Repeat with remaining batter.

    To serve, stack 2 or 3 waffles, spreading marshmallow creme between layers. Garnish top with chocolate sauce, nuts and mini marshmallows.
