2
cups hot cooked brown rice (cooked as directed on package)
3/4
cup chicken broth
1/4
cup white wine or white grape juice
1
tablespoon cornstarch
1
tablespoon oil
4
boneless, skinless chicken breast halves, cut into thin strips
1/4
to 1/2 teaspoon dried rosemary leaves, crushed
1
cup sliced fresh mushrooms
1/4
cup sliced green onions
1
cup seedless red grapes

Directions

  • 1 In small bowl, combine broth, wine and cornstarch; blend well. Heat oil in large nonstick skillet over medium-high heat until hot. Add chicken and rosemary; cook and stir 4 to 5 minutes, or until chicken is no longer pink.

Tips

Brown rice is any rice that's still encased in its rough bran layer, which gives it a tan color. it has a slightly nut-like flavor from the endosperm. It takes 45 to 50 minutes to cook. Instant brown rice has been partially cooked and then dehydrated; it take 5 to 15 minutes to cook, depending on the brand.

Serve the chicken dish with steamed zucchini spears and whole wheat rolls.
