This is my family's favorite breakfast dish! It has potatoes, bacon, eggs, tomatoes & cheese all in one skillet! It's attractive & very tasty!

Like a lot of cooks, you probably tweak recipes slightly to suit your family's tastes and diets. A little extra spice here... sub low-fat sour cream there...

Wash & peel potatoes, boil for 15 minutes
6 strips bacon, fryed & crumbled, remove & set aside
After potatoes boil 15 minutes dice them up in bite size chunks and add to bacon drippings in skillet, salt & pepper to taste, cook for 10 minutes-stirring twice
Meanwhile whip up about 8 eggs in a small bowl thoroughly - add 1/2 cup milk to the eggs & whip for 30 seconds - add to potatoes in skillet
Salt & pepper eggs & potato mixture & any herbs of your choice, cover & simmer on low until egg sets up - about 20 minutes
When egg sets up, sprinkle reserved bacon on eggs in skillet. Dice 1 tomato & add after the bacon, then add about 1 cup grated cheese, cover & cook on low until cheese melts.
Serve warm with salsa & sour cream.
Any kind of muffin is a good side addition with this dish.
