These delicious and quick to cook salmon fillet appetizers are made special when served with caviar and a citrusy sauce.

Ingredients

Salmon

tablespoons chopped fresh basil

tablespoons chopped fresh parsley

tablespoons fresh lemon juice

teaspoon garlic salt
1/4
teaspoon coarse ground black pepper
1
(1-lb.) salmon fillet with skin

Sauce

1
cup sour cream
2
tablespoons finely chopped red onion
1
teaspoon grated lemon peel
1
tablespoon fresh lemon juice
1
teaspoon honey
1
teaspoon Dijon mustard

Garnish and Bread

Fresh basil
Lemon slices or wedges

cup caviar (2 colors if desired)

slices small cocktail bread, halved if desired

Directions

  • 1 In large skillet, combine 4 cups water, 2 tablespoons basil, parsley, 2 tablespoons lemon juice, garlic salt and pepper. Bring to a boil. Add salmon, skin side down. Reduce heat to medium; cover and cook 6 to 10 minutes or until fish flakes easily with fork.
  • 2 Remove salmon from skillet. Cool 30 minutes or until completely cooled.
  • 3 In small serving bowl, combine all sauce ingredients; mix well. Cover loosely; refrigerate until serving time.
  • 4 Just before serving, place salmon on serving platter. (If desired, carefully remove skin.) Garnish plate with basil and lemon slices. Place caviar on paper towel to drain; sprinkle caviar over salmon. Serve salmon with sauce and bread slices.
Tips  

MAKE-AHEAD TIP: To make ahead, cook salmon and prepare sauce as directed in recipe. Cover each separately; refrigerate up to 24 hours. Serve as directed in recipe.
