One of my favorite Girl Scout cookie flavors of caramel, coconut and chocolate...in a Chex™ Mix!

Ingredients

  • 8 cups Rice Chex™ cereal
  • 1 brown paper grocery sack
  • 1/4 cup dark corn syrup
  • 1/2 cup butter
  • 1 teaspoon salt
  • 1 1/2 cups sweetened shredded coconut
  • 16 ounces semi-sweet chocolate
  • 1 cup brown sugar
  • 1/2 teaspoon baking soda

    Preheat oven to 325° F. Spread coconut evenly onto a cookie sheet and bake for 5-10 minutes until lightly toasted.

    Pour Rice Chex™ cereal into a clean brown paper grocery sack.

    Place butter, brown sugar, corn syrup and salt in a large microwave-safe bowl and cook on high for 2 1/2 minutes. Stir and cook an additional 90 seconds.

    Remove from microwave and carefully stir in baking soda (mixture will become frothy).

    Immediately pour over Chex™ cereal in the paper bag. Stir gently to coat cereal... Fold top of bag down and place in microwave.

    Cook for 3 minutes on high, stopping each minute to take the bag out and shake it. Remove from microwave and spread on greased cookie sheets to cool.

    Sprinkle 1 cup coconut over mixture while still warm (so it will stick to the cereal).

    While cereal is cooling, place chocolate in a microwave-safe bowl and cook on high at 30 second intervals, stirring after each, until melted and smooth.

    Pour chocolate over cooled cereal mixture and stir gently until completely coated. Sprinkle with remaining 1/2 cup coconut.

    When completely cooled, break into pieces and store in a sealed container at room temperature.
