Chicken at its easiest and most flavorful! The three-ingredient marinade adds moisture and flavor to otherwise ordinary chicken breasts.

Ingredients

1/2
cup dry sherry or apple juice
1/4
cup olive or vegetable oil
3
tablespoons soy sauce
6
boneless skinless chicken breast halves (4 1/2 pounds)

Directions

  • 1 Stir together sherry, oil and soy sauce. Cut chicken into strips, 6x1x1/4 inch. Pour sherry mixture over chicken in glass baking dish. Cover and refrigerate at least 4 hours but no longer than 24 hours, turning chicken occasionally.
  • 2 Set oven control to broil. Thread chicken onto six 8-inch metal skewers (discard sherry mixture). Place chicken on rack in broiler pan. Broil with chicken 4 to 5 inches from heat 8 to 10 minutes, turning once, until no longer pink in center.
Tips  

You can make a quick and delicious fruit sauce to serve with these savory chicken pieces by blending 2 mangoes or peaches, peeled, pitted and chopped, 3 tablespoons honey and 1/4 cup lime juice in your blender until smooth.

Or dip cooked chicken into purchased sauces such as barbecue, sweet-and-sour, béarnaise, cocktail sauce, mustard, honey or ranch dressing.

Soy sauce flavor varies widely among brands. Try a number of different varieties to find the one you like best.
