Ingredients

  • 3 cups cooked long grain rice
  • 1/3 cup chopped onion
  • 2 tablespoons chopped green chilies
  • 1 6-1/2 oz. can chopped clams do not drain
  • 1 can 5 oz evaporated milk
  • 1/4 cup seasoned bread crumbs
  • 1/2 cup shredded cheddar cheese

Directions

  1. in a 1-1/2 qt. baking dish coated with nonstick cooking spray combine:

  2. cooked rice, chopped onion and chopped chilies mix well

  3. In a bowl combine clams and milk, pour over rice mixture and stir into rice mixture, sprinkle with the bread crumbs and cheese

  4. Bake, uncovered at 359 degrees for 45 minutes

  5. DIABETIC EXCHANGES:

  6. One 1/2 cup serving prepared with evaporated milk equals 2 starch, 1 lean meat

  7. Also, instead of clams, you may substitute 1 can tuna or salmon (6-1/2 oz size can) or even Diced cooked chicken breast about 1 boneless skinless piece
