in a 1-1/2 qt. baking dish coated with nonstick cooking spray combine:
cooked rice, chopped onion and chopped chilies mix well
In a bowl combine clams and milk, pour over rice mixture and stir into rice mixture, sprinkle with the bread crumbs and cheese
Bake, uncovered at 359 degrees for 45 minutes
DIABETIC EXCHANGES:
One 1/2 cup serving prepared with evaporated milk equals 2 starch, 1 lean meat
Also, instead of clams, you may substitute 1 can tuna or salmon (6-1/2 oz size can) or even Diced cooked chicken breast about 1 boneless skinless piece
