This chilled salad is delicious, colorful and easy ... great for hot summer days!

Ingredients

cup dried orzo, prepared according to package directions
3
carrots, shredded
1/2
cup sugar snap peas, sliced thin
2
tbsp vegetable oil
1
tbsp seasoned rice vinegar
2
tsp soy sauce
1/2
tsp sesame oil
1
clove garlic, minced
1/2
tsp ground ginger
1
tbsp toasted sesame seeds

Directions

  • 1 In a large bowl, stir together the orzo, carrots, and sugar snap peas. Set aside.
  • 2 In a smaller bowl, combine the vegetable oil, rice vinegar, soy sauce, sesame oil, garlic and ground ginger. Whisk until well mixed.
  • 3 Pour the dressing over the orzo mixture and stir. Sprinkle with sesame seeds and stir again.
  • 4 Chill until ready to serve ... this is best if chilled at least 30 minutes, letting the flavors really blend together.
