Enjoy these delicious shamrock mint cookies sprinkled with green colored sugar that are perfect or a dessert.

Ingredients

cup sugar
3/4
cup firmly packed brown sugar

cup margarine or butter, softened

teaspoon mint extract
1/4
teaspoon green food color

cups all purpose flour

teaspoons baking powder

teaspoon salt

tablespoons sugar

cup green colored decorator sugar

Directions

  • 1 In large bowl, combine 3/4 cup sugar, brown sugar and margarine; beat until light and fluffy. Add mint extract, food color and eggs; beat well. Add flour, baking powder and salt; mix well. Cover with plastic wrap; refrigerate at least 2 hours for easier handling.
  • 2 Heat oven to 375°F. Shape dough into 1-inch balls. For each cookie, place 3 balls, sides touching, in triangular shape on ungreased cookie sheet. Repeat with remaining dough, placing cookies 2 inches apart. With bottom of glass dipped in sugar, flatten each three-leaved cookie. With sharp knife, score each leaf in half; do not cut through. Sprinkle cookies with green colored sugar.
  • 3 Bake at 375°F. for 6 to 10 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets.
Tips  

The shamrock is the national symbol of Ireland. According to legend, patron St. Patrick planted it in Ireland because its three small leaves represented the Holy Trinity.

Tint some of the dough yellow and sprinkle the cookies with golden-colored sugar to resemble the pot at the end of the rainbow.

Serve the cookies with glass mugs of Irish coffree (strong coffee, Irish whiskey and sugar, topped with a dollop of whipped cream and sprinkled with nutmeg).
