    Ingredients

    • 1 Cup Masarepa
    • 1 Cup Shredded Pork
    • 3  Carrots
    • 1  Poblano Pepper
    • Queso Blanco Cheese
    • 1 Cup Vinegar
    • 1 Clove Garlic

    Directions

    1. 1Shred Carrots. Bring vinegar to boil. Pour over carrots and add smashed garlic clove. Allow to steep while you do the rest of the prep.
    2. 2Roast poblano under the broiler until blackened. Peel and remove skin and seeds. Chop into sandwich sized pieces.
    3. 3Crumble cheese.
    4. 4Mix the cup of masarepa with water according to package instructions. Form very thin patties and cook in a dry frying pan until browned well on both sides.
    5. 5Split arepa with a fork , leaving half in tact to form a pocket. Stuff with pork, poblano, carrots, and cheese.
