A south american sandwich with pulled pork, roasted poblano, pickled carrot, and queso blanco.

Ingredients

cup masarepa
1
cup shredded pork
3
carrots
1
poblano pepper
Queso blanco cheese
1
cup vinegar
1
clove garlic

Directions

  • 1 Shred Carrots. Bring vinegar to boil. Pour over carrots and add smashed garlic clove. Allow to steep while you do the rest of the prep.
  • 2 Roast poblano under the broiler until blackened. Peel and remove skin and seeds. Chop into sandwich sized pieces.
  • 3 Crumble cheese.
  • 4 Mix the cup of masarepa with water according to package instructions. Form very thin patties and cook in a dry frying pan until browned well on both sides.
  • 5 Split arepa with a fork , leaving half in tact to form a pocket. Stuff with pork, poblano, carrots, and cheese.
