I’m a huge fan of having breakfast for dinner (brinner!), but sometimes I’ll do the reverse and take some dinner elements and make them more breakfast-ready. That’s definitely the case for this simple cheeseburger frittata.
It’s easy to make and really hearty. Definitely great for a crowd on a cold winter day.
To start the frittata, whisk the eggs and cream together in a large bowl and set it aside until you need it.
Then brown the beef in a large oven-safe skillet until it’s nicely browned.
Once the beef is browned, add the onions and cook them in the same skillet until they soften a bit.
If you don’t have an oven-safe skillet like this, you can brown the beef and onions and then transfer everything to a baking dish.
Then season the beef mixture and add a small amount of cheese to it. Save most of the cheese for topping later.
Then pour in the egg mixture!
Bake the frittata for about 20 minutes, until the eggs are puffed and cooked through.
Then top the frittata with the grated cheese and return it to the oven for 5 minutes to get the cheese very melted.
Then it’s ready to go!
Serve this cheesy masterpiece with some ketchup on the side.
