    Ingredients

    • 4  boneless, skinless chicken breast halves (about 1 pound)
    • 1/3  cup Italian-style dry bread crumbs
    • 1/3  cup grated Parmesan cheese
    • 1  egg, beaten
    • 2  tablespoons olive or vegetable oil
    • 2  cups spaghetti sauce
    • 1/2  cup shredded mozzarella cheese (2 ounces)

    Directions

    1. 1Flatten chicken to 1/4-inch thickness between plastic wrap or waxed paper. Mix bread crumbs and Parmesan cheese. Dip chicken into egg; coat with bread crumb mixture.
    2. 2Heat oil in 12-inch skillet over medium-high heat. Cook chicken in oil 10 to 15 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut. Add spaghetti sauce. Reduce heat to low. Cook 2 to 3 minutes or until sauce is hot. Sprinkle mozzarella cheese over chicken. Serve with hot cooked pasta if desired.
