Make a colorful medley of peppers, onions, golden raisins and sunflower nuts as a quick side dish or for flavorfully topping a main dish.

Ingredients

medium green, red or yellow bell peppers, cut into 1/4-inch strips (3 cups)

medium onion, thinly sliced

cup golden raisins

tablespoon salted sunflower nuts

Directions

  • 1 Spray 10-inch nonstick skillet with nonstick cooking spray; heat over medium heat.
  • 2 Add bell peppers, onion and raisins; stir-fry 2 to 4 minutes or until vegetables are crisp-tender. Stir in remaining ingredients.

Regular raisins are a good stand-in for golden raisins. They’re not as pretty in this dish, but they add the same chewy sweetness.
