    Ingredients

    • 1/4 cup Progresso Italian breadcrumbs
    • 1/4 tsp freshly ground black pepper
    • 3 tbsp chopped scallions or chives
    • 1 8-ounce container plain or Greek yogurt
    • 1/2 cup shredded mozzarella cheese
    • 3/4 cup shredded gruyere cheese
    • 2 garlic cloves, minced
    • 1 small yellow onion, chopped
    • olive oil, for sauteing
    • 1 tbsp butter, cut into small cubes, plus more for greasing the casserole dish
    • 1 head cauliflower, broken into small florets

    Directions

    1. 1Preheat oven to 375 degrees F.
    2. 2Bring a large pot of water to a boil. Add a pinch of salt, then boil cauliflower, covered, for about 7-8 minutes or until slightly tender, but still firm (the cauliflower will finish cooking in the oven, so it shouldn't be fork-tender yet).
    3. 3Drain cauliflower in a colander and rinse with cold water. Pour into a buttered casserole dish.
    4. 4Saute onions and garlic in olive oil in a skillet over medium heat until onions just begin to caramelize. Remove from heat and set aside.
    5. 5In a large bowl, combine 1/2 cup Gruyere cheese, mozzarella cheese, yogurt, scallions and pepper. Stir in onion-garlic mixture.
    6. 6Spread mixture over cauliflower, then sprinkle with breadcrumbs, remaining Gruyere cheese and butter. Bake, uncovered, for about 30 minutes or until topping is a golden brown. Serve warm.
