It's a new year -- time for a new you with three skinny breakfast quesadilla recipes!


The new year’s such a great time for a new twist on breakfast! I mean, for reals. Granola’s great to help us keep our resolutions, but sometimes ya just want something … creative.

So here we have it! We now have not one, not two, but three tasty, skinny takes on breakfast quesadillas. And they are so totally good to us, it's like magic for the mouths (and waistlines, baby!).

Hailing in favorite flavors from around the world, we're gonna walk through how to make Thai, Mexi, and Greek quesadillas to fill your belly for breakfast.

To make it even easier on you, these fun little finger foods can be made the night before, then tossed in the micro for 20-30 seconds as you run out the door and hit your day.

Skinny Greek Breakfast Quesadilla

Ingredients

medium flour tortillas
1/2
cup egg whites, scrambled and lightly salted (or 2 eggs, scrambled and lightly salted)
3/4
cup Italian blend cheese, shredded

tablespoons sundried tomatoes
2
tablespoons sliced kalamata olives
4
tablespoons Yoplait Greek yogurt
2
tablespoons fresh basil, chopped
olive
oil cooking spray

Directions

  • 1 Heat a skillet over medium heat.
  • 2 Place one tortilla on a clean workspace. Top with scrambled egg whites, cheese, sundried tomatoes, and olives. Cover with second tortilla, spray with nonstick cooking spray, and cook (oil side down) in hot skillet. Flip and cook on the second side until both sides are golden brown.
  • 3 In a small bowl, combine basil and Yoplait. Serve with quesadillas for dipping.
