Bisquick Heart Smart™ mix, turkey sausage and reduced-fat cheese create a healthified version of a classic brunch favorite.

Ingredients

2
packages (12 oz each) bulk turkey sausage
1
medium bell pepper, chopped (1 cup)
1
medium onion, chopped (1/2 cup)
3
cups frozen shredded hash brown potatoes
1
cup shredded reduced-fat Cheddar cheese (4 oz)
1
cup Bisquick Heart Smart™ mix
2
cups 1% milk
1/2
teaspoon salt
1/4
teaspoon pepper
4
eggs

Directions

  • 1 Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • 2 In 10-inch skillet, cook sausage, bell pepper and onion over medium heat, stirring occasionally, until sausage is no longer pink; drain. Stir together sausage mixture, frozen potatoes and 1/2 cup of the cheese in baking dish.
  • 3 In medium bowl, stir Bisquick mix, milk, salt, pepper and eggs until blended. Pour into baking dish.
  • 4 Bake uncovered 35 to 40 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Bake 1 to 2 minutes longer or just until cheese is melted. Cool 5 minutes before serving.
Tips

If you'd rather make a smaller recipe using a 9-inch pie plate, cut all ingredient amounts in half, and bake 30 to 35 minutes.

This pie can be covered and refrigerated up to 24 hours before baking. You may need to bake a bit longer than the recipe directs since you’ll be starting with a cold pie. Watch carefully for doneness.
