Skinny Spinach Dip

Now your favorite spinach dip is even better for you!

Ingredients

cups chopped fresh spinach, loosely packed
12
ounces Yoplait® Greek 100 plain yogurt
1/4
cup chopped green onions
3
cloves garlic, minced
1
cup shredded part-skim Mozzarella cheese
1/4
teaspoon salt
1/4
teaspoon black pepper
1/4
cup grated Parmesan cheese

Directions

  • 1 Preheat oven to 350°F.
  • 2 Stir together first seven ingredients in a large bowl in a large bowl until evenly mixed. Transfer mixture to a small baking dish, and use a spoon to spread so that is is flat on top.
  • 3 Bake for 30 minutes, or until the cheese is melted and bubbly and the edges are slightly golden. Remove and immediately sprinkle with Parmesan cheese. Serve warm with sweet potato chips.

Your favorite hot and cheesy spinach dip just went skinny!


Calling all spin dip lovers!  Your favorite hot and cheesy spinach dip just went skinny!

Yep!  You know how for years and years spinach was pretty much the only healthy things in spin dip?  Well, the times they are a-changin’.  But your friends will never be able to taste a difference, because this Skinny Spinach Dip rocks!

Made with Greek yogurt, part-skim Mozzarella, lots of garlic and fresh spinach and more, this dip will have everyone wanting more.  And more.  And more.  So you might as well go ahead and plan on making a double batch.

Here’s the how-to!

 

Chopped spinach.

Start with lots and lots of chopped fresh spinach.  (Or you could also sub in frozen spinach, drained and patted dry with paper towels.)

 

Chopped scallions.

Mix in some more fresh green with the scallions.

 

Greek yogurt.

Then add in the star ingredient – thick and delicious Greek yogurt.

 

Mix in cheese, salt and garlic.

Then sprinkle in the Mozzarella, garlic, salt and pepper and stir it all together.

 

Greek Yogurt Spinach Dip ready to bake.

Spread the mixture in a small baking dish, leveling out the top.  Then bake for about 30 minutes until the cheese is nice and melted and bubbly.

 

Sprinkle parmesan over baked dip.

Once you pull it out, immediately sprinkle with Parmesan.
