    Ingredients

    • For the spinach mixture:
    • 1 (10 ounce) package frozen chopped spinach
    • 1 (15 ounce) container ricotta cheese
    • 1 whole egg
    • 1 teaspoon minced garlic
    • 1 cup grated Parmesan cheese, divided
    • 2 (18 ounce) cans Progresso Recipe Starters Creamy Parmesan Basil
    • 3 cups shredded mozzarella cheese
    • 2 cups cooked and diced chicken
    • 6  to 8 lasagna noodles, uncooked

    Directions

    1. 1Spray a 4 quart slow cooker with cooking spray.
    2. 2Microwave spinach in a small bowl for about 4 minutes. Drain the liquid from the spinach and stir in the ricotta cheese. Add the egg, garlic, and 1/2 cup of Parmesan cheese. Set aside.
    3. 3For the white sauce: Pour the 2 cans of Creamy Parmesan Basil sauce in a medium bowl. Add the remaining 1/2 cup of Parmesan cheese, 2 cups of shredded mozzarella, and the chicken. Stir to combine.
    4. 4Pour 1 cup of the white sauce on the bottom of the slow cooker. Layer about 2-3 lasagna noodles in the slow cooker, breaking noodles into pieces if necessary to make sure you have a full layer of noodles. Spoon 1/3 of the spinach mixture on top of the noodles in an even layer. Spoon about 1 cup of the white sauce evenly over the spinach layer.
    5. 5Repeat layers two more times. You may have some extra white sauce. That's okay. Discard it.
    6. 6Finally top off the lasagna with the remaining 1 cup of mozzarella cheese.
    7. 7Cook on low for 4 hours. Let lasagna set for at least 20 minutes before serving. It will be hot! Sprinkle with some Parmesan cheese if desired and serve.

    Hey! This recipes calls for the chicken to be cooked prior to placing in the slow cooker. However, the lasagna noodles should be put into the slow cooker uncooked.

    I have a roaster and have not had luck cooking lasagna with it. For best results it needs to cook on low. Hope that helps...
