This should be called Mile High Lasagna Pie. A slow cooker makes it easy. Chicken, spinach and Parmesan-Basil sauce make it scrumptious.

This Slow Cooker Chicken and Spinach Lasagna is layers of creamy white Parmesan sauce, spinach, ricotta, chicken, and noodles thrown into a slow cooker, emerging as a masterpiece.

I'm a huge fan of making lasagna in a slow cooker. If you haven't tried it yet, you're missing out. This Easy Slow Cooker Lasagna is an old favorite in our house. But as I brainstormed, I thought that a white-sauced version would be awesome!

When I think white sauce, chicken and spinach seem to be the perfect compliment to it. And that's how this new Slow Cooker Chicken and Spinach White Lasagna was born.

I am loving these new Recipe Starters cooking sauces. They're the bomb! This creamy Parmesan Basil sauce is the perfect canvas to add anything you want to it.

The sauce has Parmesan with a slight hint of basil for a fresh taste. Not to mention that the recipe on the back of the can for easy Chicken Alfredo won me serious points with my family.

For this lasagna I started with cheesy spinach layer.

Mix ricotta, egg and spinach.

The next layer is the Parmesan Basil cooking sauce mixed with some mozzarella, chicken, and Parmesan cheese.

Then just start layering away with your noodles, spinach mixture, and white sauce mixture. Four hours later you have a creamy white lasagna that is out of this world.

Beware, if you try to eat it right away, you will burn your mouth to oblivion. I'm short about 100 taste buds today because of it!

Slow Cooker Chicken and Spinach White Lasagna


For the spinach mixture:
(10 ounce) package frozen chopped spinach
(15 ounce) container ricotta cheese
whole egg
teaspoon minced garlic
cup grated Parmesan cheese, divided
(18 ounce) cans Progresso Recipe Starters Creamy Parmesan Basil
cups shredded mozzarella cheese
cups cooked and diced chicken
to 8 lasagna noodles, uncooked


  • 1 Spray a 4 quart slow cooker with cooking spray.
  • 2 Microwave spinach in a small bowl for about 4 minutes. Drain the liquid from the spinach and stir in the ricotta cheese. Add the egg, garlic, and 1/2 cup of Parmesan cheese. Set aside.
  • 3 For the white sauce: Pour the 2 cans of Creamy Parmesan Basil sauce in a medium bowl. Add the remaining 1/2 cup of Parmesan cheese, 2 cups of shredded mozzarella, and the chicken. Stir to combine.
  • 4 Pour 1 cup of the white sauce on the bottom of the slow cooker. Layer about 2-3 lasagna noodles in the slow cooker, breaking noodles into pieces if necessary to make sure you have a full layer of noodles. Spoon 1/3 of the spinach mixture on top of the noodles in an even layer. Spoon about 1 cup of the white sauce evenly over the spinach layer.
  • 5 Repeat layers two more times. You may have some extra white sauce. That's okay. Discard it.
  • 6 Finally top off the lasagna with the remaining 1 cup of mozzarella cheese.
  • 7 Cook on low for 4 hours. Let lasagna set for at least 20 minutes before serving. It will be hot! Sprinkle with some Parmesan cheese if desired and serve.
