Slow Cooker Chicken & Cheesy Dumplings

If I could carry a tune, I’d sing an ode to my beloved slow cooker.


I’d serenade it with my beautiful voice and a million tiny violins, inhaling the magnificent scents of my slow cooking meal until it was all done and ready for me to devour. I’d tell my slow cooker how much I loved it with a song as I scooped out the glorious creation it just prepared for me.

Because if I’m not doing any of the cooking, I’ve got to do something, right? A sonnet it is.

But seeing as my singing voice sounds like a frog with another frog in its throat, my slow cooker was not privy to my songstress-ness. Yet, it still was kind enough to make this delicious Slow Cooker Chicken & Cheesy Dumplings meal for me. Oh slow cooker, you are the wind beneath my wiiiiiiings…

Ahem. As I was saying, this recipe for chicken and cheese-filled dumplings, also known as the most amazing comfort food in existence, graced my dinner table the other day and, based on its roaring success, will continue to do so for the remainder of my lifetime. Not only does it make enough for a small crowd, it’s ridiculously easy to make. Stupid easy. But I’ll still show you all the work I didn’t do.

First ingredients in slow cooker

First, place the chicken thighs, chopped onion, baby carrots and red potatoes in the bottom of a slow cooker.

Now, as if things weren’t easy enough, pour a couple cans of Progresso’s tasty new Recipe Starters creamy garlic cooking sauce over the top.

Cover it all up and let it cook on low heat for the day. Go do some fun stuff while you’re waiting and not working away in the kitchen.

Ingredients for dumplings

When you come back, make the dumplings. Easy is made even easier with Bisquick mix, and cheesier with… well, shredded cheddar cheese.

Mix everything up and scoop it on top of the chicken mixture.

Good gravy – er, cooking sauce! That looks yummy.

Cover the slow cooker again and let the dumplings cook on high heat for about 45 more minutes.

Now for the best part – the eatin’. Scoop, plate, devour. Save the sonnet for your slow cooker for dessert (your mouth will be full until then, anyway).

Slow Cooker Chicken & Cheesy Dumplings

Ingredients

lbs boneless, skinless chicken thighs
1
lb baby red potatoes
1
white onion, cut into thick chunks
2
cups baby carrots
2
18-ounce cans Progresso Recipe Starters creamy roasted garlic cooking sauce
2
cups Bisquick mix
1/2
cup shredded cheddar cheese
2
tablespoons chopped fresh parsley
1/2
cup milk

Directions

  • 1 Add chicken thighs, potatoes, chopped onion and carrots to a 6-quart slow cooker.
  • 2 Pour both cans of Progresso Recipe Starters cooking sauce over the chicken and vegetables. Heat slow cooker to low heat, cover and set aside to cook, about 8 hours.
  • 3 When everything is fully cooked, heat slow cooker to high heat. In a medium bowl, mix together Bisquick, cheese, parsley and milk.
  • 4 Dollop tablespoonfuls of the Bisquick mixture on top of the chicken and vegetable mixture. Cover slow cooker and set aside to cook until a toothpick inserted in the center of the biscuits comes out clean, about 45 minutes.
  • 5 Serve immediately.
