Slow-cooker chicken with a simple cola-based BBQ sauce. So tender and delicious!

Ingredients

  • 2 pounds boneless skinless chicken
  • 1 cup ketchup
  • 1 cup Coca-Cola™
  • 1/2 sweet onion, grated
  • 3 tablespoons Worcestershire sauce
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Fresh scallions, sliced for garnish

    In a large slow cooker, stir together ketchup, Coca-cola™, grated onion, Worcestershire sauce, and spices.

    Add chicken pieces, which should be mostly covered by liquid. Cover with slow cooker lid and cook on high for two hours.

    After chicken is cooked, drain off most of the liquid and pour it into a medium saucepan. Bring sauce to a simmer and cook until it thickens, about 5-10 minutes. Meanwhile, keep chicken warm in slow cooker on the warm setting.

    Serve cooked chicken, sliced, with thickened sauce on top and garnished with fresh scallions.

  • A few spices, a little Coke, some chicken and your Slow-Cooker Coca-Cola™ BBQ Chicken dinner is done! As everyone knows, the recipe for Coca-Cola™ is a closely guarded secret. Rumor has it that only a few people actually know it, and they aren’t allowed to fly together! But if you crack open a can and smell it alongside some spices, you can pick up hints. Personally, I think Coca-Cola™ smells a bit like coriander, anise, vanilla, and maybe even some savory things like cumin. These flavor profiles also happen to work really good in a BBQ sauce. By starting with a Coca-Cola™ base, you can slowly simmer chicken in your slow cooker and end up with really tender meat – and a sweet and savory BBQ sauce! The sauce will actually get more watery as it cooks because of water in the chicken. The sauce will be way to watery to serve as-is, but that’s easy to fix. When the chicken is done cooking, pour off the liquid in the slow cooker and add it to a medium saucepan. Bring that to a simmer and let it reduce until the sauce is nice and thick. It should take about 10 minutes. Then just slice up the chicken and serve the sauce over the top! I like to add a big sprinkle of fresh chopped scallions to brighten up the flavors a bit.
