Slow Cooker Creamy Basil Chicken and Rice

Easy does it with this super simple slow cooker rice dinner with chicken and yummy creamy basil flavor.


This summer, we’re going to slow it down. We’re going to take in the scenes, take a chill pill, take a breather and take time to enjoy it all.

And for dinner, we’re going to eat this easy-peasy Slow Cooker Creamy Basil Chicken and Rice. Because when it’s a summer of slowin’ down, there’s nothing like the slow cooker to help us out.

When I say this recipe is easy-peasy, I mean it. It takes literally five minutes to throw together, and that’s it – no oven required, either (bonus in the summer!).

A few hours later, BAM – dinner is ready. It’s actually really not that intense, but I thought I’d bring home the point of how easy this is to make. Ahem.

ANYWAY, let’s hurry up and make some chicken and rice already, shall we? I’m ready to get to taking it slow!

 

Ingredients for Slow Cooker Creamy Basil Chicken and Rice Recipe

First, round up your ingredients. We’re going to use Progresso’s yummy Creamy Parmesan Basil Recipe Starters to creamify and flavorify this recipe (those are real actions, ya know).

 

Add Creamy Basil Recipe Starters to chicken in a slow cooker.

Place the chicken in the bottom of your slow cooker, then pour the Recipe Starters cooking sauce on top.

 

Add onions, carrots and garlic, then cook in slow cooker.

Scatter chopped onion, baby carrots and minced garlic on top, then cover it and leave it be to cook. (Psst – now’s a good time to take it easy!)

 

Cook rice.

Also, if you haven’t cooked up your rice yet, now’s a good time to do so.

 

Add frozen peas.

About a half-hour before the slow cooker is done cooking, stir in some frozen peas, salt and pepper to taste. Whew! The hard part’s over.

 

Creamy Basil Chicken and Rice ready to eat!

To serve, spoon some of the chicken mixture over a heap of cooked rice. That’s it and that’s all. The end.

 

Serve chicken over rice.

Time to relax. Time to chill out. Time to take it down a notch. And BAM -- time to eat.

Slow Cooker Creamy Basil Chicken and Rice

Ingredients

1 1/4
lbs chicken breasts
1
can (18 oz) Progresso Recipe Starters Creamy Parmesan Basil cooking sauce
1
white or yellow onion, roughly chopped
1
cup baby carrots, halved lengthwise
2
teaspoons minced garlic
1
cup frozen peas
salt
and pepper to taste
1
cup rice, cooked

Directions

  • 1 Place uncooked chicken breasts in the bottom of a slow cooker (slice them into smaller pieces, if desired). Pour creamy Parmesan basil cooking sauce evenly over chicken.
  • 2 Top chicken and sauce with chopped onion, halved baby carrots and minced garlic. Cover and cook on medium-high heat for 6 hours.
  • 3 About 30 minutes before chicken mixture is done, stir in frozen peas and salt and pepper to taste.
  • 4 Serve chicken mixture over cooked rice.
