    Ingredients

    • 4 boneless skinless chicken breasts
    • 1 (16 ounce) jar Old El Paso salsa
    • 1 (15 ounce) can whole kernel corn, drained
    • 1 (15 ounce) can black beans, drained
    • 1 (8 ounce) package cream cheese

    Directions

    1. 1Place chicken breasts into the slow cooker. Add the salsa, corn, and blacks beans.
    2. 2Cook on low for about 4-5 hours or until chicken is done. Take out the chicken and shred it. Return the shredded chicken to the slow cooker.
    3. 3Add the cream cheese to the slow cooker and let it sit on top for about 30 minutes. Once the cream cheese is soft stir it into the chicken mixture thoroughly.
    4. 4Serve over rice or in warm flour tortillas.

    This would not work on a weeknight, unless you have a crockpot with delayed a start. And then come home, and wait 30 minutes for cheese? How about zap the cream cheese in the microwave until soft, and then stir it in?
