    Ingredients

    • 2 tablespoons olive oil
    • 1 1/2 lean beef stew meat or lamb, cut into 1 1/2 inch cubes
    • 2 tablespoons flour
    • 3 medium potatoes, peeled and diced into 1 1/2 inch cubes
    • 1 (10 ounce) package Green Giant frozen Honey Glazed Carrots
    • 1/2 white onion, sliced into large chunks
    • 3 tablespoons tomato paste
    • 3 cups Progressso beef stock
    • 2 teaspoons Italian seasonings
    • 1 clove garlic, minced
    • 3 tablespoons cornstarch
    • 3 tablespoons water

    Directions

    1. 1In a large pot, heat the olive oil over medium heat. Toss the meat with the flour and brown it in the oil. Set aside.
    2. 2In the bottom of a slow cooker place the potatoes, carrots, and onions. Place the meat on top of the onions.
    3. 3Combine the tomato paste, beef broth, Italian seasonings and garlic and pour over the beef and vegetables.
    4. 4Cook on low for 6-8 hours or until potatoes are done. For the last half hour of cooking combine the cornstarch with the water until a paste is formed, then stir it into the stew. Cook on high for a half hour or until stew has thickened.
    5. 5Add salt and pepper to taste and serve.
