Lentils and smoky meats like lean Canadian bacon have a mutual attraction and taste great in this chunky and thick chill-chasing soup.

Ingredients

4
cups water
1
teaspoon dried thyme leaves
1/2
teaspoon salt
1/4
teaspoon pepper
3 1/2
cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
2
medium carrots, cut into 1/2-inch pieces (1 cup)
1
medium potato, peeled, cut into 1/2-inch pieces (1 cup)
1
medium onion, finely chopped (1/2 cup)
1
medium stalk celery, cut into 1/2-inch pieces (1/2 cup)
1
bag (16 oz) dried lentils (2 1/4 cups), sorted, rinsed
1
package (6 oz) sliced Canadian bacon, coarsely chopped

Directions

  • 1 In 3 1/2- to 4-quart slow cooker, mix all ingredients. Cover; cook on Low heat setting 8 to 9 hours or until lentils are tender. Stir well before serving.
