This Slow Cooker Stuffing is different with the addition of cheddar cheese and pecans. It's a lovely addition to this cornbread based stuffing.

Ingredients

  • 2 tablespoons olive oil
  • 1  large onion, chopped (1 cup)
  • 3  medium celery stalks, sliced (1 1/2 cups)
  • 1  package (16 ounces) seasoned cornbread stuffing crumbs (5 3/4 cups)
  • 1/3  cup butter, melted
  • 1/2  teaspoon rubbed sage
  • 1/4  teaspoon pepper
  • 2  cupsvegetable broth (from 32-ounce carton)
  • 1 1/2  cups shredded sharp Cheddar cheese (6 ounces)
  • 1  cup pecan halves, toasted

Directions

  1. Cook onion and celery in olive oil in a 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally.

  2. Place onion/celery mixture, stuffing crumbs, butter, sage and pepper in 4- to 5-quart slow cooker. Pour broth over mixture; toss to combine. Cover and cook on Low heat setting 3 hours to 3 hours 30 minutes. Gently stir in cheese and pecans.

  3. Serve stuffing, or keep warm in slow cooker up to 1 hour.
