Add a flavorful side dish to your meal with this slow cooked herb rice that’s made using Progresso® chicken broth.

Ingredients

3
tablespoons butter or margarine
1 3/4
cups uncooked converted long-grain rice
3 1/2
cups Progresso™ chicken broth (from 32-oz carton)
1/4
teaspoon salt
6
medium green onions, chopped (6 tablespoons)
1
teaspoon dried basil leaves
1/3
cup pine nuts, toasted

Directions

  • 1 Spray 4-quart slow cooker with cooking spray. In 10-inch skillet, melt butter over medium-high heat. Cook rice in butter 4 minutes, stirring frequently, until golden brown. In slow cooker, stir together rice, broth, salt, onions and basil.
  • 2 Cover; cook on High heat setting 2 hours or until liquid is absorbed and rice is tender. Stir in pine nuts.
Tips

If you have fresh basil on hand, use 1 tablespoon chopped fresh instead of 1 teaspoon dried basil.
