    Ingredients

    • 2 large carrots, sliced (use 4 if the carrots are small)
    • 1 small onion, chopped
    • 2 cloves garlic, minced
    • 4 14.5-oz cans diced tomatoes (recommended: Muir Glen)
    • 4 cups vegetable broth
    • 1 lb dried brown lentils
    • 1/2 cup chopped fresh basil
    • salt and pepper, to taste

    Directions

    1. 1Combine all of the ingredients in the crock of a slow cooker. Cook on low for 10-12 hours, until the lentils are tender. Serve.

    I tried this recipe, a. nd 1lb of beans is just apparently WAY too many. My beans cooked in my crockpot for over 12hrs and were never done. I am now having to remove half of what is in the pot, add water and cook half. So I suggest anyone trying to make this, just use a half pound of the lentils, that should be good enough

    I am making it now as well. Added leaks and used remainder of Muir Glen Italian Pasta Sauce. It has everything and once you add veg broth it makes it consistent with adding canned tomatoes. Thanks for this quick recipe

    I am making this soup right now - of course I always have to add something different. I added a half a bottle of red wine and parsnips and plan to add asparagus shortly before serving. I also used fire roasted tomatoes and added a pinch of cayenne pepper and red pepper flakes. Smells delicious. Can't wait to try it!!

    This sounds really good! But I like chunks in my homemade soups, so I think I will try this with either fesh tomatoes or canned large chunk.
