    Ingredients

    • 1 (15-ounce) can black beans, rinsed and drained
    • 1 (15-ounce) can pinto beans, rinsed and drained
    • 1 (16-ounce) can chili beans in chili sauce, undrained
    • 1 (10-ounce) can diced tomatoes with green chilies, undrained
    • 1  green bell pepper, chopped
    • 1  yellow bell pepper, chopped
    • 1 medium yellow onion, chopped
    • 1/4 cup tomato paste
    • 4 teaspoons minced garlic
    • 3 teaspoons chili powder
    • 3 1/2 cups shredded cheddar cheese

    Directions

    1. 1In a 4-6 quart slow cooker, add black beans, pinto beans, chili beans and chili sauce, diced tomatoes with green chilies, chopped green bell pepper, chopped yellow bell pepper, chopped onion, tomato paste, garlic and chili powder. Stir to combine.
    2. 2Cover and cook on HIGH for 4 hours.
    3. 3When chili is done, stir in shredded cheese until melted. Serve immediately with tortilla chips.

    Turned out fabulous! I substituted 1/2 block light cream cheese for one cup chedder. Yummuy:)

    When I entered this recipe into Livestrong.com, it came up with the following (approximate!) nutrition facts: 190 calories, 6 grams of fat, 645mg of sodium, 5.2g fiber, 15.35g protein. It was based on using regular beans (not low-sodium) and Cabot light shredded cheese. Hope this helps all the new years resolutioners out there!
