    Ingredients

    • 12 slices firm white bread (recommended: sandwich bread)
    • basil and garlic goat cheese
    • 30 thin slices cucumber, peeled if you like
    • 4 oz smoked salmon

    Directions

    1. 1Spread out six of the slices of bread. Spread each of them with goat cheese.
    2. 2Place five of the cucumber slices on each of the six slices of bread in a single layer.
    3. 3Divide the smoked salmon evenly among the six slices of bread. Top each with the remaining bread.
    4. 4Cut the sandwiches on the diagonals, creating four triangles per sandwich.
    5. 5Serve immediately, or cover and chill until ready to serve.
