    Ingredients

    • 1/2 cup crushed Nature Valley Oats n' Honey granola bars (about 2 bars)
    • 1 cup Gold Medal unbleached all-purpose flour
    • 1 cup whole wheat flour or another cup of all-purpose flour
    • 3/4 tsp cinnamon
    • 1/2 tsp salt
    • 1/2 tsp baking soda
    • 2 sticks unsalted butter, softened
    • 1/2 cup packed brown sugar
    • 1  egg
    • chocolate almond bark (for chocolate drizzle)
    • 12 marshmallows, cut in half

    Directions

    1. 1Preheat oven to 350 degrees F.
    2. 2Place Nature Valley bars in a food processor and mix until finely ground.
    3. 3In a medium bowl, combine and mix ground bars, flour(s), cinnamon, salt and baking soda.
    4. 4In the bowl of a stand mixer fixed with paddle attachment, cream together butter and sugar until smooth. Add egg and beat on medium speed until well mixed. Add flour mixture and stir to combine.
    5. 5Drop large tablespoonfuls of dough onto a parchment paper-lined baking sheet or baking stone, spaced about 2 inches apart. Bake until golden brown, about 10 to 15 minutes.
    6. 6Remove baking sheet(s) from the oven and place marshmallow halves, cut side down, on the top center of each cookie. Preheat the broiler (or turn up oven as hot as it will go). Place one baking sheet at a time under the broiler for about a minute, or until marshmallows are just browned (NOTE: Watch these 'mallows like a hawk -- they can char or catch fire very, very quickly!).
    7. 7Remove baking sheets from oven and place cookies on cooling rack with parchment paper underneath. Allow cookies to cool completely.
    8. 8In the microwave or over the stove, melt a few ounces of chocolate flavored almond bark according to package instructions. Pour melted chocolate in a ziploc bag and cut a very, very small hole in one corner. Quickly, in a back-and-forth motion, drizzle the chocolate from the end of the bag onto your cookies. (You can also dip a spoon into the chocolate and drizzle that way if you don't have a bag)
    9. 9Allow cookies to cool completely before serving.

    In my opinion, these cookies look better than they taste. My boyfriend liked them but I thought they were rather bland. Make sure you use real chocolate for the drizzle. I used Hershey's s'mores dessert icing in traditional chocolate (found near the tube frosting/icing in grocery store) and it definitely didn't add anything. It doesn't even taste like chocolate. If I make this again, I'm going to experiment and use finely ground graham crackers in addition to in in place of the nature valley bars and possibly add a little vanilla extract to the cookie mixture.
